Dinosaur "Fossil" Cookies

Whether you have a little boy that would love these or you just like cinnamon and sugar, sugar cookies, this recipe is so easy and SO good. Happy Baking!

Ingredients
  

  • 3 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup shortening
  • 2 eggs
  • 1 cup sugar
  • 1 1/4 tsp vanilla

Instructions
 

  • Preheat over to 350 degrees. Line baking sheet(s) with parchment paper.
  • Combine flour, baking powder, baking soda and salt in medium sized bowl.
  • Cut shortening into flour mixture just as you would a pie crust. Continue to do this until shortening is broken up into pea sized pieces.
  • Whisk together eggs, sugar and vanilla in separate bowl. Once combined, stir into flour mixture until dough forms. (I like to use my hand towards the end)
  • Divide dough into two separate pieces and slightly flatten each dough ball into "disc" shapes. Wrap in plastic wrap and refrigerate for 30 minutes - 1 hour.
  • Once dough has had time to chill, flour a baking surface and begin rolling out dough. I like to roll mine to about 1/4 an inch in thickness.
  • Cut out desired shapes. (You can re-roll out scrap dough)
  • (If making dino cookies, this is the time you would make your foot imprint and sprinkle on cinnamon and sugar)
  • Bake cookies at 350 degrees for 10-12 minutes. Time may vary depending on how large or small your cookies are. I would recommend checking after 8 minutes.

Notes

This recipe made 22-24 dino cookies using a medium size circle cutter.
