Tis’ the season! 12 days of cookies is here!
I’ve been dreaming up these 12 days for over five months now and let me tell you, I’m SO excited. Christmas is one of my favorite times of the year. Everyone is a little more cheery, the decorations are beautiful, I LOVE giving gifts, and I, obviously, enjoy baking cookies. Over the last couple months I’ve chosen 12 different cookie recipes from holiday inspired classics, traditional cookies with a twist, and easy skill leveled so there is something for everyone. Whether you wanna use all 12 and make a killer cookie gift box for someone ( you should totally do this) or you just wanna choose one, I’m certain you’ll find one you’ll like.

For the first day of cookies I thought I would start with something super simple but GOOD. Mexican Wedding Cookies. They’re buttery, sugary, crunchy, and so so delicious. Best part is it’s only a three step mixing process.

For these cookies you’ll need:
12 oz butter, soft
3 oz powdered sugar
1 Tbsp vanilla
3/4 tsp salt
8 oz bread four, sifted
8 oz cake flour, sifted
6 oz pecans, chopped
Extra powdered sugar for coating

In a mixer fitted with a paddle attachment, cream together the first four ingredients. Add flours and mix until just combined. Add pecans and mix until evenly incorporated.
Using a small cookie scoop, scoop cookies onto a parchment lined baking sheet. Bake at 350 until bottom edges start to slightly turn brown.
While cookies are still warm, toss in powdered sugar.

These cookies are a great addition to any holiday cookie platter, accompanying another dessert, beside a cup of warm coffee, or simply just on their own. Believe me when I say these cookies are dangerous in my house guys. They’re just the perfect size that they’re a total “snacking” hazard. You’ve been warned.
