Butter Spritz Cookies

Hey guys! We’re on day SIX of 12 Days of cookies. That means we’re halfway through! That also means Christmas is less than a week away and I still need to Christmas shop. Yikes.

Does anyone else wait until the last minute to buy gifts? I swear every year I’m like “next year I’m buying all my gifts in October and November and not causing a self inflicted anxiety attack”. Then the next year rolls around and it’s six days before christmas and I’ve boughten some slippers and a candy bar, in which I ate on the way home. I’ll never learn.

…In other news! For day six I made Butter Spritz Cookies. These cookies are another great addition to any holiday cookie platter. They’re super simple but super good. The worst part about these cookies? The time it takes you to make these is the time they’ll last when they come out of the oven. Keep the snackers locked out. Seriously.

Here’s what you’ll need:

10.5 oz butter, room temp
5 oz powdered sugar
2 egg yolks
1/2 tsp vanilla
3 1/4 cups all purpose flour
1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp salt

Sanding sugar

1. In a mixer fitter with a paddle attachment cream together butter and powdered sugar. Add egg yolks and vanilla.

2. Sift together flour, cinnamon, ginger and salt. Add to butter mixture and mix until incorporated.

Here’s where these cookies could get tricky. I’m not gonna lie, these cookies are HARD to pipe out like I have pictured. Unless you have very strong hands, in which case you will need a cloth piping bag with a large star tip. However, if you don’t I suggest getting a Spritz Cookie Press. This will make you’re life much easier.

Which ever way you decide to pipe or press these out, once finished, sprinkle each cookie with sanding sugar and bake on a parchment lined baking sheet at 350 degrees for 8-10 minutes. Depending on size this recipe will make 20-22 cookies.
