The Best Carrot Muffins

Happy Sunday morning ya’ll. Sunday’s are one of my favorite days. I feel like Sunday’s are meant for relaxing, reflecting on your weekend, mentally preparing yourself for the workweek, running errands, preparing a stupid good feast for family dinner, and depending on the season, a cozy day in watching football.

Sunday’s are just the best. You have no obligation or pressure to do anything. It’s literally the day you can do whatever you so choose.

So, of course, I chose to make these muffins. And let me tell you, I’m a happy camper, as is my neighbor whom I left a box outside their door for.

It’s the small things in life right?

Rosemary Apricot Bars

It’s officially summer! Name a better way then celebrating spending the day outside, drink in one hand and dessert in the other.

Exactly.

I created a bar that was light and combined fruit and fresh herbs. Does anyone else feel like as soon as nice weather hits they start using an over abundance of fresh herbs in everything? Just me?

Mexican Street Corn Chicken Tacos

Tacos are all the rage right now, and I for one am totally okay with it. I’m always in search of some good a** tacos or on the hunt for a killer new recipe to try at home.

Tacos aren’t just for Tuesdays anymore guys.

In my search I stumbled upon these bad boys.

No-Bake Rhubarb Cheesecake

Okay, I know these look super complicated but I promise you, these cheesecakes are SUPER simple.

Why? No bake.

There is no cooking involved. Well mostly. The rhubarb on top is cooked in simple syrup for 20 seconds. But that hardly counts, right?

The trickiest part of these cheesecakes is peeling the strips of rhubarb off. You really have to press hard against the stalk using a potato peeler. I personally found it easier to peel that colored outside layer off. Then start your peeling. Sometimes you don’t get a hood strip. Don’t fret. Just keep going. Get more stalks then you think you’ll need. I tried to get some greener and some dark red so I could make the ombre effect. I thought this looked the best.

Lemon Sugar Cookies

It’s been a hot minute since I’ve baked. Ok ok, it’s only been four weeks, but being a pastry chef it’s been four weeks too long. I keep finding myself looking through my book of recipes or looking for new ones on the inter webs when I lay my little one down for a nap and I thought as Easter quickly approaches what better recipe to share than these lemon sugar cookies.
