Weeknight BLT Pasta

Happy Tuesday! How is everyone’s week going so far? My “actual” work week doesn’t start until tomorrow, but I have been very busy around the house. Monday’s and Tuesday’s are my “get your shit together” kind of days. I usually plan everything out for the week, coordinate Oliver’s schedule with my own, clean, shop, write blog posts, edit photos, and make dinner. That’s a lot for on top of watching a toddler, so when it comes to dinner, it must require little to no effort. Enter in this BLT Pasta. BLT’s were something I grew up eating every summer. The crispy bacon, juicy tomatoes, and perfectly toasty bread? So simple and so good. But as good as they are, this summer I wanted to switch it up. I wanted to make something we could enjoy as a family, and honestly, not toast a million slices of bread.

We’ve made it to the weekend ya’ll! Happy Friday! Does anyone have anything fun planned? Christian and I have a (much needed) date planned tomorrow afternoon and I’m looking so forward to it. It’s hard enough finding time as a couple when you have a toddler, but add a pandemic on top of it, it’s near impossible. Don’t get me wrong, we’ve done a few little picnics outside and things of that nature, but we haven’t really gone on a random date (in Madison) in SO long. Plus, it was all his idea so it’s a win win in my book. 5 points to Gryffindor! 😉 In all seriousness, my days have all been blending together into one, so having something to look forward to is SO nice. It also has made me reflect on what we have been able to do this summer and be grateful we were healthy and able to. Which, lucky for you guys, brings me to today’s post. While I was reminiscing, I remembered this AWESOME sandwich I made back in June for one of our picnics. I joked that I should have titled it “How to Spend Your Entire Paycheck at Whole Foods, Sandwich”. Because, well, lets be real. As awesome as Whole Foods is, you’re not gonna walk out of there for less than $50. And if you do, you’ve probably purchased a single potato chip, and if there was a sale, you might have even gotten a tablespoon of dip.

5 Ingredient Avocado Toast

Let’s face it, I’m a mom. And some days, I just don’t feel like making an elaborate meal. Whether that be for breakfast, lunch or even dinner. Sometimes, I just wanna slap some shit on toast and call it a day. Ya feel me? Raising a toddler can be exhausting at times and, sometimes, I just don’t have it in me to “do it all”. That my friends, is exactly where this Avocado Toast comes into play. Most of the time you see Avocado toast being eaten for breakfast or brunch. But it’s definitely more than an just AM grub in my household. I can literally eat this toast for any meal of the day, and maybe even a heavy snack given the opportunity. It’s so quick, super fresh, almost no cook,and most importantly, healthy.

Coconut Cream Pie

Do you every find yourself thinking man, has this been a WEEK, and it’s only Monday? That’s how my day has been. Things just seem to get crazier and crazier with everything going on in the world. I find myself often thinking about ways to escape from all of this. Can I move to Australia? Sweden perhaps? Maybe I’ll just stay indoors and not go anywhere. Maybe I’ll say screw it and do whatever I want to. Unfortunately none of these options are logical. My mind is just strongly craving normalcy. Is anyone else’s? How are you all coping with the world around us? For me, when things seem to get a little chaotic around me, I like to enter my zen place. The kitchen. I find it very calming and a bit of an escape from reality. I bake and create whatever I feel at any given moment with no influence from anyone else. If you think about it, dessert is completely unnecessary to survive. It’s sole purpose is to bring joy to yourself and to others. I love that.

Blueberry Lemon Angel Food Cake

Happy Sunday Ya’ll! Did anyone do anything fun this weekend? Oliver and I had a super chill weekend and stayed home for most of it. It’s been pretty rainy and dreary all day with not much to do. However, I did make this beautiful Blueberry Angel Food Cake which just screams SUMMER. I couldn’t let blueberry season come to an end without creating something with fresh blueberries just one more time. Don’t get me wrong, I have frozen A LOT, and I love making syrups and jams, but something about the burst of a fresh picked blueberry in your mouth is something you can’t experience in the winter. Sure, you can still find blueberries, but they tend to be underripe and let’s face it, extremely over priced.

7 Ways To Stay Motivated Despite Challenges

Have you ever had a day where you just can’t seem to catch a break and everything is seemingly going wrong? Let’s just jump right into the real question here; Did anyone else grow up eating Fluffernutter sandwiches? Creamy peanut butter, gooey marshmallow fluff, and that super soft Wonder Bread? Man, childhood was the freaking best. Don’t get me wrong, they weren’t packed in my lunch everyday, but they sure were a gift when my mom made them. Why is it so frowned upon for adults to eat like that? Like, I can give my child a sandwich filled with marshmallows but the second I pack one in MY lunch I get weird looks in the break room? TOTALLY NOT FAIR. BUT, fear not my friends. I have made something, better. Something you can eat in adulthood and not be shamed for.

Creamy Green Chile Chicken Enchiladas

What better way to kick off the week than with some bomb ass enchiladas. These are good guys. Like, really freaking good. I feel like some things in life were just invented to indulge in. Ya know? Some things were just meant for your inner fat lady to come out and sing. Like these enchiladas. These enchiladas are extra cheesey, extra creamy, a little spicy, and a whole lot of addicting. They are at their best served with fresh tomatoes, avocados, charred sweet corn, and lots of fresh cilantro.

Mediterranean-Style Toast. Happy Tuesday ya’ll! Tuesday’s are currently the start to my work week and I can’t say I’m mad about it. If COVID has done any good in my life, it’s allowed me to have a three day weekend with my little nugget. This past weekend Oliver has been teething like no other, so we’ve laid low and enjoyed lots of snuggles, naps, and youtube videos. Dear lord, a lot of youtube videos. Does anyone else’s kid love to watch the same exact video on repeat for as long as you’ll let it slide? Like, really? You don’t wanna switch it up and watch Mickey Mouse or Puppy Dog Pals? You really just wanna watch the same exact thing over.. and over…and over again..?
